Our process of slow grinding on European millstones keeps the grain cool and the flour contains the endosperm, germ, and bran for both maximum flavor and nutritional value. This high-protein flour is perfect for tortillas, breads, bagels, pizza dough, muffins, and more.
Utilizing a hard white wheat removes some of the bitterness associated with tannins in the bran coat of the hard red winter wheat.
